- Preheat Oven: Set the oven to 400°F (205°C) to prepare for baking.
- Combine Dry Ingredients in a Small Bowl: Blend the brown sweetener, spices and salt in a small bowl first; this helps prevent clumping and ensures even distribution throughout the filling.
- Beat Eggs: In a large mixing bowl, beat the eggs until smooth and frothy. This adds structure and helps the pie set.

I haven’t tried making a meringue with monk fruit which has a different chemical makeup than refined sugar and dissolves at a higher temperature.

How to Make Swiss Meringue with Bourbon
- In a heatproof bowl, combine egg whites, granulated sugar, and cream of tartar.
- Place the bowl over a saucepan filled with 3 inches of simmering water, ensuring the bowl does not touch the water.
- Whisk the mixture constantly for about 5 minutes, until the sugar is fully dissolved and the temperature reaches 160°F (71°C); if not, continue whisking until it does.
- Remove the bowl from heat and immediately start whipping the mixture on high speed using a stand mixer with whisk attachment or an electric mixer with whisk attachment.
- Once stiff, glossy peaks form, add the fresh vanilla beans and mix until combined.
- Next, add the bourbon and mix until fully incorporated.
- Using a spoon or spatula, apply the meringue to your bourbon pumpkin pie.
- Toast the meringue with a kitchen torch: Toast the meringue with a torch until golden brown. Refrigerate the pie for up to 6 hours before serving.
- Toast the meringue in the oven: Preheat your oven to 450°F (232°C) and bake the pie until the meringue is toasty, which usually takes about 3 minutes. Keep a close eye on it to prevent over-browning. Depending on your oven, you may have to rotate it.

- Make the Almond Flour Pie Crust. Since the bourbon pumpkin pie bakes for about an hour, I suggest skipping fluted edges and creating solid pie walls that are level with the pie pan. It's also best to use a pie shield throughout the entire baking time.
MAKE THE BOURBON PUMPKIN PIE FILLING
- Preheat Oven: Set the oven to 400°F (205°C) to prepare for baking.
- Combine Dry Ingredients in a Small Bowl: Blend the brown sugar or brown monk fruit (¾ cup), the spices (1¼ teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon cloves, ¼ teaspoon nutmeg) and salt (½ teaspoon) in a small bowl first; this helps prevent clumping and ensures even distribution throughout the filling.
- Beat Eggs: In a large mixing bowl, beat 2 eggs until smooth and frothy.
- Stir in Pumpkin: Using a spoon or spatula, mix the pumpkin puree into the beaten eggs until fully incorporated.

The egg white and sugar mixture should reach 160°F (71°C) to achieve the desired marshmallow texture and to ensure food safety.
- In a heatproof bowl, combine 5 egg whites, 1 cup of granulated sugar, and ¼ teaspoon of cream of tartar.TIP: If you have a stand mixer, use the bowl of the stand mixer.
- Place the bowl over a medium saucepan filled with 3 inches of simmering water, ensuring the bowl does not touch the water.
- Whisk the mixture continuously over low to medium heat for about 5 minutes, until the sugar is completely dissolved and the temperature reaches 160°F (71°C). If needed, continue whisking until it does. TIP: If you have a stand mixer, you can simply use the whisk attachment as a hand whisk for mixing.
- Remove the bowl from heat and immediately start whipping the mixture on high speed using a stand mixer with whisk attachment or an electric mixer with whisk attachment. NOTE: With a stand mixer, it takes about 5 minutes.
- Once stiff, glossy peaks form, add fresh vanilla beans scooped out of 1 vanilla bean pod and mix until combined.
- Next, add 1 teaspoon of bourbon and mix until fully incorporated.
- Using a spoon or spatula, apply the meringue to your bourbon pumpkin pie.
- Toast the Meringue with a Kitchen Torch: Toast the meringue with a torch until golden brown. Refrigerate the pie for up to 6 hours before serving. To toast the meringue in an oven, see the next step.

BOURBON WHIPPED CREAM RECIPE – A GENTLY SWEETENED ALTERNATIVE TO SWEET MERINGUE
- Whip the Cream: Pour 1 cup of heavy whipping cream into a chilled bowl. Using an electric mixer or stand mixer with whisk attachment, beat on medium speed until it starts to thicken.
- Add Sugar and Vanilla: Once the cream begins to form soft peaks, add 1-2 tablespoons of powdered sugar and fresh vanilla beans scooped out of 1 vanilla bean pod or 1 teaspoon of vanilla extract. Continue beating until stiff peaks form, being careful not to overwhip.
- Add Bourbon: Once stiff peaks form, mix in 1 tablespoon of bourbon.
- Serve: Use immediately on the pie or individual slices.
