- Water – is crucial for binding and hydrating the crust.
How to Make the PERFECT Dragon Fruit Pie Crust
Making a dragon fruit pie crust couldn’t be easier.
In fact, it only takes a minute or two in a stand mixer or food processor.

1. In a large mixing bowl, combine dragon fruit powder, almond flour, granulated sweetener, salt, butter or oil, and vanilla extract. Mix on medium high in stand mixer or food processor for 1-2 minutes until dough comes together. Add the water gradually, if needed.
2. Then, shape dough into ball in bowl and divide it into two parts.
Tip: Use a kitchen scale to divide the dough evenly.

3. Place half of the dough in your pie pan, pushing it towards the pan’s walls.
4. Then, shape the walls: Firmly press the dough into the fluted edges and trim as needed using a flexible spatula. Ensure that the crust walls are perpendicular to the bottom of the pie or tart pan.

5. Next, put the remaining dough in the pan.
6. Press it into the bottom of the pan using your hands.
Tip: For an even bottom, use a mini saucepan to help press down the dough.

7. Bake the dragon fruit pie crust at 350°F (180°C) for approximately 15 minutes, or pre-bake (blind bake) it for about 10 minutes.
Tip: To ensure the center cooks evenly and prevent the edges from over-browning, use a pie shield or cover the edges with aluminum foil. This will protect the vibrant magenta color of the vegan crust.
8. Allow the fully baked magenta tart shell to cool completely before adding a filling that doesn’t require additional baking. Pictured: apple curd filling.

Notes

I love this recipe and what a fun color. It was really easy to make
Glad you enjoyed it!
How about if i used not the powder but the fruit it self. Like dragon fruit puree. How is the scale? Any recomendation?
Fresh dragon fruit won’t work as a substitute for dragon fruit powder in a pie crust. Powder is concentrated, dry, color-dense, and flavor-intense.
Actual dragon fruit is mostly water and very mild in flavor.
I got the dragon fruit powder you recommended and the crust looks and tastes gorgeous!
Thanks for letting me know.
