My apple tree is ripe so I’ve been baking up a storm of apple treats.
This brings us to today’s gluten free tart: It’s a soft, plush apple curd filling in a naturally gluten free almond flour tart crust topped with rich, sweet white chocolate and apples.

This tart isn’t just easy to make. It’s also a showstopper. Simple elegance fuses with amazing flavor, perfect texture and a luxurious apple curd filling.
And let’s not forget the white chocolate and apple triangles on top. Sweet and tangy converge in this tart!
And, of course, there’s also the catchy dragon fruit pie crust. You can however also make the recipe with an almond flour pie crust or a vegan almond flour pie crust.

The Tastiest Apple Curd Tart
I wanted to make this recipe as easy and straightforward as possible. So, after pureeing the apples, all you do is mix in the remaining ingredients.
Then, pour the filling into a pre-baked pie crust and let it set in the refrigerator.
Decorating this tart is optional but I’ll show you how I made my design.
As for equipment, you need to puree the apples with an immersion blender, regular blender or food processor. Otherwise, all you need to make the apple curd filling is a saucepan and a spoon or spatula. And, of course, if you want to mimic my design, you’ll need a triangle-shaped cookie cutter.

Ingredients in This Apple Curd Tart Recipe
This apple curd tart simply melts in your mouth and it’s hard to believe that it just takes a few simple ingredients to make it.
For the Gluten Free Tart Crust:
- 1 tart crust – dragon fruit pie crust, almond flour pie crust or vegan almond flour pie crust.
For the Apple Curd:
- Apples (cored, peeled and chopped) – You can use a single variety or a blend of different varieties depending on whether you want a sweeter or more tart result (for example, Granny Smith for tartness, Honeycrisp for sweetness).
- Lemon Juice – adds a boost of acidity, enhancing the flavor.
- Water – to coat the apples when you boil them down.
- Granulated Sweetener – For a lower carb tart, I recommend sweetening this recipe with zero-calorie monk fruit.
- Salt – enhances the overall flavor profile of the apple curd tart.
- Unsalted Butter (room temperature) – adds a rich, creaminess to the apple curd, giving it a luxurious mouthfeel.
- Egg Yolks – thicken the apple curd, making it smooth and creamy.
- Cinnamon (optional) – adds warmth and depth that complements the flavor of apples and gives the apple curd a warm note.
- Gelatin (or Agar Agar) – so the tart sets properly.
What Kind of Apples Should I Use in this Gluten Free Apple Curd Tart?
I used one Fuji apple, one Granny Smith and one red apple for a blend of apple flavors. But you can of course use your favorite apples.

How to Make This Apple Curd Tart Recipe
Here you’ll find step-by-step instructions so you can make the perfect gluten free apple curd tart.
Make the Gluten Free Tart Crust
Make 1 tart crust and let it cool. I used a dragon fruit pie crust, but apple curd also pairs wonderfully with almond flour pie crust or vegan almond flour pie crust.
Make the Apple Curd Filling
- Put the apples in a medium saucepan. Then add the lemon juice and water and cook down the apples (7-10 minutes).
- Puree the mushy apples with an immersion blender, regular blender or food processor.
- Return the puree to the saucepan and stir in granulated sweetener, salt and unsalted butter, gently stirring until the sweetener dissolves and the butter melts. If it starts to bubble, lower the heat to a very low flame.
- Put the egg yolks in a small bowl and slowly stir in about a half cup of the apple puree to warm the yolks. Once blended, add the mixture back to the pureed apple curd in the saucepan. Cook for 2 minutes, stirring continuously.
- If using gelatin to set the apple tart: Whisk in the gelatin and let the curd cool for 10-20 minutes before pouring it into a prebaked tart shell. Refrigerate overnight to allow the tart to set.
- If using agar agar to set the tart: Whisk in the agar agar, ensuring the mixture comes to a boil. Once boiling, reduce the flame and cook for about 2 minutes. Then let the mixture cool for 10 minutes before pouring it into a prebaked tart shell. Refrigerate overnight to allow the tart to set.
How to Make the Apple Triangles

Cut four sides off each apple, slicing as close to the core as possible while avoiding the seeds.
Place the apple pieces skin-side up and use a triangle-shaped cookie cutter to cut out the shapes. If the cookie cutter doesn’t go all the way through the apple, it will leave an imprint that you can follow with a Chef’s knife to finish the cuts.
Make sure the triangles are of equal thickness to ensure a uniform layer of triangles on the curd.
How to Make White Chocolate Triangles

- Line a baking sheet with parchment paper. Melt a white chocolate bar and pour the melted chocolate onto the parchment paper.
- Use an offset spatula to spread the chocolate evenly.
- Refrigerate for 15 minutes.
- Take it out of the refrigerator and press a triangle-shaped cookie cutter into the semi-set chocolate to create the shapes.
- Refrigerate for an additional 15 minutes.
- Remove from the fridge and use the offset spatula to gently lift the white chocolate triangles.
- Arrange the triangles on top of the tart, following my pattern or creating your own design.
How to Make the Geometric Tart Design

Begin in the center by arranging 3 apple triangles and 3 white chocolate triangles in the shape of a radiation symbol. Then, build out the pattern from there, extending the lines to complete the design.
You also have to cut some small pieces to fit in the areas close to the edge.
How to Store This Gluten Free Apple Curd Tart Recipe
This breathtaking apple curd tart is easy to store and best eaten the day after you make it.
Refrigerate Gluten Free Apple Tart
Always refrigerate this pie in an airtight container. You can, however, refrigerate it for up to five days but note that after day 2, the apples slowly start to oxidize.
Freeze Gluten Free Apple Curd Tart
You can also freeze the apple tart in an airtight container without any decoration on top. When you thaw it, enjoy it nude or add apples and white chocolate.
