The Plushest Keto Plum Cake
I wanted to make this recipe as easy and straightforward as possible. So, after slicing the plums, all you do is cream together the butter and sweetener.
Then gradually add the dry ingredients to the wet, combining them into a smooth cake batter. Next, line the bottom of the buttery, sugar-sprinkled pan with slices of gorgeous plums and top with keto cake batter. Then, bake.
You don’t need any special equipment. You can make the batter with two bowls and a spoon or spatula. Or use an electric beater or stand mixer if you have one handy.

Ingredients in the Softest Keto Plum Cake Recipe
This keto cake recipe is as soft and fluffy as possible, with a plush crumb that simply melts in your mouth.
These simple ingredients are all you need to make it:
- Plums (slightly firm and sliced about a half inch thick) – The plums caramelize with the butter and sweetener, creating the most stunning and fragrant keto cake.
- Almond flour – Low carb almond flour gives the keto plum cake a moist mouthfeel due to its healthy fat content. Almond flour also helps the cake stay moist, so it’s still perfectly moist a few days after you bake it.
- Baking powder – acts as a leavening agent and creates lift.
- Salt –enhances the overall flavor profile of the cake.
- Cinnamon –adds warmth and depth that complements the sweetness of the plums and the nutty flavor of the almond flour.
- Unsalted butter (room temperature) –adds a rich, creamy flavor to the cake.
- Granulated monk fruit or your favorite sweetener (divided into a ½ cup and a ¼ cup) – I recommend making this keto recipe with zero-calorie monk fruit.
- Large Eggs (room temperature) – act as a binding agent, helping to hold the ingredients together. This is especially important in almond flour cakes, where there’s no gluten to provide structure.
- Almond extract – significantly enhances the flavor profile of this almond flour cake. So I highly recommend adding it.
- Vanilla extract –adds a warm, sweet, and aromatic flavor that complements and enhances the natural sweetness of the plums and the nuttiness of the almond flour.
- Unsweetened almond milk (room temperature) –adds moisture to the cake, which is crucial for achieving a tender and soft crumb.

What Kind of Plums Should I Use in Plum Upside Down Cake?
Opt for plums that are slightly firm for the best results. If your plums are very ripe and juicy, place them in a sieve to drain the excess juice. Otherwise, the extra moisture could make your cake soggy.
How to Make This Upside Down Plum Cake Recipe
Here you’ll find step-by-step instructions so you can make the perfect keto upside down plum cake.

1. Preheat oven to 375ºF (190ºC) and put almond flour and baking powder in a bowl.
2. Add cinnamon.

3. Add salt.
4. Whisk the dry ingredients together.

5. Line the bottom of a round 9 inch (23 cm) baking pan with a round piece of parchment paper and generously butter the top of the parchment paper and lightly butter the sides of the pan with 1–2 tablespoons soft, slightly melted butter.
6. Sprinkle ¼ cup granulated sweetener onto the buttered parchment paper on the bottom of the pan.

7. Layer the bottom of the prepared baking pan with plum slices: Start on the outside, working your way to the center. Put the slices closely next to each other, not on top of each other.
Once you’ve covered the bottom, use the remaining pieces to plug as many “holes” as you can.
In other words, cut tiny pieces of plum and put them into as many gaps between plum slices as possible. The idea is to cover the bottom of the pan with plums, to prevent as much batter as possible from seeping through.
8. In a separate bowl or the bowl of your stand mixer, add the butter and a ½ cup sweetener.

9. Cream the butter and sweetener.
10. Beat in 3 eggs one at a time.

11. Add vanilla extract and almond extract to the keto plum cake batter.
12. Gradually add the dry mixture to the wet mixture, spoon by spoon.

13. Mix until smooth and add the unsweetened almond milk.
14. Spoon the batter onto the plums.

15. Use a spatula or offset spatula to smooth out the batter on top.
16. Bake the keto plum cake at 375ºF (190ºC) for about 30–40 minutes or until the cake is golden on top and an inserted toothpick comes out clean.

17. Let the cake cool in pan for 10 minutes. Then, run a thin knife or spatula along the edges and flip the upside down plum cake.
How to Store This Upside Down Plum Cake Recipe
This breathtaking keto plum cake is easy to store.
Store This Keto Plum Cake Recipe at Room Temperature
As with most cakes, this keto plum cake is best the day it’s made, but it keeps really well in an airtight container in a cool dry place for about 2–3 days.
Refrigerate Keto Plum Cake
After that, refrigerate the keto plum cake for up to 5 days and it will stay wonderfully moist and delicious.
What to Serve with Plum Upside Down Cake
I typically don’t add any toppings to this keto plum cake because it’s already incredibly delicious and satisfying on its own.

Optional Pairing Ideas for This Keto Plum Cake Recipe
Toppings for Upside Down Plum Cake
Serve with a dollop of light and airy sugar free whipped cream which pairs nicely with the cake’s rich flavors. Or top with a dollop of sugar free ice cream, a delightful contrast to the keto plum cake.
Beverages for Upside Down Plum Cake
As for beverages, serve with herbal tea or coffee: A warm cup of herbal tea or coffee balances the flavors, making for a satisfying dessert experience.
