How to Make the Best Oat Flour Pie Crust Vegan
Making an oat flour pie crust couldn’t be easier. In fact, if you have a stand mixer or food processor, it only takes a minute or two to process the dough. Otherwise, a handheld electric mixer also works.

1. In a large mixing bowl, combine oat flour, almond flour, salt, coconut sugar, vegan butter or oil, and water 2. Mix on medium high with an electric mixer or in a stand mixer or food processor for 1-2 minutes. The dough will be crumbly.

Follow these steps and your tart walls will look great.

3. Put dough in bowl and use a spatula to press the dough into a disc.
4. Use a kitchen scale to divide the dough evenly. To make beautiful tart walls, build the walls first. So, place half of the disc in your pie pan and break it up, pushing it close to the edges of the tart wall.

5. Firmly press the dough into the fluted edges. Use a spatula to trim any excess dough from the bottom of the tart pan and add it to the sides. Ensure the crust walls remain perpendicular to the base of the pie or tart pan.
6. Gently run a knife along the top of the crust to create a smooth, even surface.

7. Then add the rest of the dough.
8. Shape the bottom with the palm of your hand.
TIP: For a perfectly level bottom, place a pan or saucepan that matches the width of the tart’s interior into the crust – then gently press down.

9. Bake the oat crust at 350°F (180°C) for about 15 minutes, or pre-bake (blind bake) for about 10 minutes. Please note that the color change will be subtle, with small brown spots indicating it’s done.

10. Let the fully baked crust cool completely before adding a no-bake filling.
11. Once the filling has set, place the tart on a glass or bowl and carefully slide off the side rim. Then, use a chef’s knife to separate the crust from the base and gently slide the tart off the bottom.

I love this golden crust. What’s interesting is that you don’t at all taste the coconut. Instead, as you say, it’s a bit of a caramel crust. I had some leftover chocolate filling and it tastes great in this crust.
