Step-by-Step Photos

1. Toast the Pumpkin Seeds (Optional to Amplify the Seeds’ Rich Flavor):
- Preheat your oven to 350°F (175°C).
- Spread the pumpkin seeds evenly on a baking sheet.
- Roast them in the oven for about 5 minutes, until they are lightly golden and fragrant. Be careful not to burn them. You can skip this step if you prefer unroasted pumpkin seed butter.

2. Cool the Toasted Pumpkin Seeds: Allow the toasted seeds to cool for about 10 minutes before processing them. If you prefer unroasted pumpkin seed butter, just skip to the next step.

3. Blend the Seeds:
- Add the cooled (or raw) pumpkin seeds to a food processor or high-speed blender.
- Process on high for 1–2 minutes, scraping down the sides of the bowl as needed. The seeds will first break down into a crumbly texture, and then, with continued processing, they’ll start to release their oils and become smoother.

4. Add Oil and Optional Ingredients:
- As the mixture begins to smooth out, add 1 tablespoon of oil to help it blend into a creamy butter. If you prefer a thinner consistency, you can add more oil, one teaspoon at a time, until you reach the desired consistency.
- If you want a slightly sweetened or flavored pumpkin seed butter, add a pinch of salt, a splash of vanilla extract, or some honey, maple syrup or agave syrup at this stage. Then, continue blending until smooth and creamy.

5. Adjust Consistency and Flavor:
- Taste the pumpkin seed butter and adjust the sweetness, salt or oil as needed.
- If it’s too thick, you can add a bit more oil to thin it out.
6. Store the Pumpkin Seed Butter:
- Transfer the finished spread to an airtight jar or container.
- Lastly, store it in the refrigerator for up to 2–3 weeks.
After two nights in a sealed jar in the refrigerator, it is even creamier.
