I wanted to make this recipe as easy and straightforward as possible, so we’ll make it in stages. Beginning with the easy vegan tart shell, followed by the vegan blueberry jelly and vegan lemon curd.
You need an electric mixer or stand mixer or food processor to make the tart dough. Otherwise, you need a saucepan, spatula, sieve and zester to make the vegan blueberry jelly and luscious lemon curd.

This vegan lemon blueberry tart recipe is as sweet and zesty as possible, so each bite simply melts in your mouth.

These are the simple ingredients you need to make it:
Oat Flour Pie Crust
Here are the ingredients in the oat flour pie crust:
- Oat Flour – or make your own by blending oats in a food processor or blender.
- Almond Flour – fine, blanched almond flour.
- Salt – just a dash.
- Coconut Sugar – has a rich, caramel-like flavor that adds a warm sweetness to the oat crust. Overall, it doesn’t taste like coconut at all.
- Vegan Butter or Oil – I use plant-based Earth Balance spread.
- Water – is crucial for binding and hydrating the vegan tart shell.
Vegan Blueberry Jelly
Here are the ingredients in the vegan blueberry jelly:
- Blueberries (frozen is easier) – Frozen blueberries thaw beautifully and also contain a lot of juice which you need to make the vegan blueberry jelly.
- Lemon Juice – The acidity of lemon juice above all enhances the tartness and balances the sweetness of the jelly, creating a more complex and pleasing flavor profile. Lemon juice also contains citric acid, which helps stabilize and enhance the gelling process, especially when combined with gelling agents like agar agar.
- Sugar or Monk Fruit – For low-calorie vegan blueberry jelly, use zero-calorie monk fruit sweetener.
- Agar Agar – is a plant-based thickener that forms a gel-like consistency when dissolved in boiling water and then cooled.
Vegan Lemon Curd
Here are the ingredients in the vegan lemon curd:
- Lemon Juice – from fresh lemons. In other words, don’t use bottled lemon juice which usually contains water.
- Water – supports the texture and consistency of lemon curd, so the result is smooth and creamy.
- Sugar or Monk Fruit – for low-calorie vegan lemon curd, use a natural sugar substitute such as zero-calorie monk fruit.
- Cornstarch – thickens the vegan lemon curd.
- Cashew Butter – or make your own in a food processor or blender with unsalted, unroasted cashews.
- Lemon Zest – from the yellow part of the lemon.
- Turmeric – If using turmeric, add only a pinch at a time. Adding too much can introduce a sharpness to your plant-based lemon curd.
How to Make This Vegan Lemon Blueberry Tart Recipe

Oat Flour Tart Crust

Vegan Blueberry Jelly and Lemon Curd
Then make the easy vegan blueberry jelly.

1. In a saucepan, combine thawed blueberries, lemon juice, and sugar or monk fruit. Cook over medium heat for 5-6 minutes, until the blueberries have broken down.
Tip: Use thawed, frozen blueberries. When you measure the blueberries, be sure to include the blueberries’ juice – there will be plenty of it in the bag.
2. Pour the cooked blueberries into a sieve set over a bowl. Then, use a spatula to press the blueberries, extracting as much juice as possible.

3. You’ll end up with a bowl of blueberry juice.
4. Heat the blueberry juice until it reaches a boil. Whisk in the agar agar, then reduce the heat to a simmer and continue whisking for 2-3 minutes. Turn off the heat and let the blueberry syrup cool for 5-10 minutes.

5. Pour the blueberry syrup into the cooled, baked tart shell and refrigerate for at least an hour so it sets before adding the vegan lemon curd layer.
6. After the blueberry layer has set in the refrigerator for about 45 minutes, start making the vegan lemon curd. To do so, simply combine the ingredients in a saucepan and whisk until thick. Then let the lemon curd cool for 5 minutes before gently pouring it onto the blueberry layer.
7. Refrigerate for at least 5 hours so the vegan lemon tart sets, ideally overnight, and enjoy!

- 1 Tablespoon Lemon Juice (10 g)
- 3 Tablespoons Sugar or Monk Fruit (30 g)
- 1¼ Teaspoon Agar Agar
Vegan Lemon Curd
- 1 Cup Lemon Juice (227 g)
- ½ Cup Water (113 g)
- 1½ Cups Granulated Sugar or Monk Fruit (285 grams)
- 3 Tablespoons Cornstarch (16 grams)
- 4 Tablespoons Cashew Butter (64 grams) – If you make it in a food processor, use unroasted, unsalted cashews.
- 1 Tablespoon Lemon Zest (the yellow part)
- ¼ Teaspoon Turmeric (optional) – It doesn't take much turmeric to dye the lemon curd. Turmeric also has a sharp flavor so add in ⅛ of a teaspoon increments and whisk in well after each addition.

- After the curd has cooled for 5 minutes, gently pour 1½ cups of lemon curd over the blueberry layer. If you pour more than 1½ cups over the blueberry layer, you might overpower the blueberry layer. So be sure to measure the quantity.
- Refrigerate for at least 5 hours so it sets, ideally overnight, and enjoy!
